We have a god of souls, so as much as that idea is good you'll have to get a double check on the reincarnation part.

Honestly a lot of the easy to think of ones are either taken or slightly overlapped with another god.

There's a god of the sea though I don't know if that covers the deep sea.

Also, what about a god of mortal (not god) dreams?

Also before I forget, there's a god of the unknown already, though calling it a god of the unnamed would be accurate as well.

Well, if it hasn't been taken, then mind's. Mortal minds of course. That or the Abyss/Deep like Cthulhu or Aldrich from Bloodborne.

Entropy is off limits due to it being part of the void as discussed in earlier OOC conversations.
Madness might work, though you'll have to double check with the GM on that and the others as there are already god and a goddess with madness as part of their personality, a goddess of devilry who cursed man, and a god of disease, who currently has to worry about killing a giant rat he accidentally mutated when trying to punish it for stealing.

I'd say you still have a chance, given I only found this a few days ago and it's still likely that I'll be joining at a later point with the goddess I'm going to be fleshing out.
