The humans here have physically adapted to fight against the dragons. There are many non-sentient ones that are basically just normal animals that live in those biomes that the humans hunt.

They have. But the human who live with them have adapted to their lands. Some humans have tried to kill off the dragons, but have failed as many human and sentient dragons have stopped them. Same goes for the dragons that have tried to wipe out the humans as well.
