Mm... If you have the opportunity to unlock your mangekyo sharingan, I'd recommend it. Otherwise, my personal philosophy is to copy everything you can.

Does copying work with any technique?

Well, for example, you could copy someone's movements with a pencil to cheat on a test, or the same with a keyboard, but more advanced techniques that require more of the body are harder to copy, but possible. Really, there are few exceptions that aren't techniques that use other EEs than chakra. You're not going to be able to learn to use ki by copying someone, for example, but you'd be able to copy the movements just fine. And, especially combined with the byakugan to see chakra circuits, you'll be able to copy any chakra-based technique you see as long as you focus on it. But if you want to pick up a new skill, copying an expert will be very helpful.
