In Full Metal Alchemist, both the normal and Brotherhood, chimeras were artifically made through alchemy, but done so by combining a person with an animal. The alchemist who did it used his wife the first time and then his daughter and her dog the second time. It was a distressing episode.

A chimera to me has always been a griffin with three heads.

A Chimera is just basically a creature mixed together with several different types of animals. Multiple heads usually but mostly just requires different animal body parts. A reason why when most people see a animal with different multiple heads, they think chimera or when it has several different animal body parts. Kinda like a Griffin or Manticore. So usually it's the multi heads that give them the most distinction
