From what I understand, your instincts should be a part of your memories. Maybe past events or taught manners that mold you as well as innate feeling that come from blood. An amalgamation of all of that. If they are fighting, is that a sign that something is missing? Or something is there that shouldn’t?

It seems memories were implanted. Remove those and either leave it at that or regain your old ones. The way it seems like, you have a good chance. New, fabricated memories can mess up people but are easier to remove than real ones.

They’re more like instincts, fighting with my memories. Am I Jade the wendigo, or am I just... Jade? Do my memories mean more than my blood?

That’s the problem. If I were to guess, they not only tried to remove your memories, but also implanted new ones. Maybe to ease the process? Possibly. But that is a recipe for disaster.
