Current I think watching fight scenes can help in general terms with writing combat, since it can give you an idea of flow and choreography.

I mean, depends on what you're writing, and the tone and theme of what you're writing. Trained armored knights were legitimately monstrous on the battlefield, so looking up how they fought helps.

As much as there's a lot of reasons twitter sucks, I genuinely don't want to see it die for the sake of all the artists who now rely on it. Hoping the shithead stops trying to directly administrate.

In-setting there's a fencer knight(in another country) who is near-inhumanly good with her rapier, but it's an edged sort for more active combat as well.

Yes to pretty much all of that, that kind of thing seems perfectly fine. The "valid explanation" thing was only for the elf part so if that's not there you don't need to worry about it.

As for the character growth, that mostly depends on how the character starts out and what you intend. If you want them to grow a lot, by all means do so, but if you want them to be decently powerful at the start but not overpowered you don't have to. In that regard t's your choice.

I love Dark Souls and Bloodborne as well, and I've been playing DS3 pretty much nightly since getting it. I even have a build based off of Fanilly running through the game right now which has been pretty fun.

But like I said, any questions at all I'm for sure willing to answer so... ask away! Your current concept would work but you'd just have to explain why an elf had joined the order... and you'd fill the second "nonhuman" slot.

I'd... probably say more like D&D half-elves then Tolkien from what I recall of both. I know the Tolkien version a bit more and that's a much more complicated thing. ^^;
I'd be willing to accept a half-insert race here.

Cirno Knight is prooooobably not a good idea though.
