I personally like having the Sharingan, but that's because I have the advanced version that you wouldn't be able to get, unfortunately. If you mean specifically between the Byakugan and Tenseigan, I prefer the Byakugan for its enhanced sight.

There's not really a notable difference between getting brand new ones or altering other than if you have vision problems, new eyes will give you perfect vision again. And no, it's a biological thing to be able to have multiple. I can because I actually have a multitude of eyes in my natural form, and a benefit of my species is that in human form I'm able to switch between them naturally, so I had each type implanted on a different eye and now can cycle between them.
