Although it is not really story related, if you should ever need any ideas for Kaiju, look up the live-action, almost documentary-style show called "River Monsters" that plays on Animal Planet. The show follows a professional fisherman, Jeremy Wade, as he travels all over the world to seek out elusive fish. He usually starts off investigating deaths.
There are some scary-ass fish in some of those episodes, like the Airapaima, Tiger Fish, and even herbivorous-turned-carnivorous Pacu.
Though I don't think the Pacu are prime examples for Kaiju, I just think it's frightening to know that they are naturally herbivorous in the Amazon; then learn that when introduced to a new environment with less accessible vegetation, rather than die out, the Pacu turned carnivorous and aggressive. I believe they are adapted to eating nuts that fall from the trees into the water, but when introduced to a foreign ecosystem they took to eating meat, even so far as to target humans.
