Because it makes it easier. Not all alicorns are high-tier alicorns, and very few shapeshift into humans, as a matter of course, so it's not particularly often needed.

Well, the anatomy of pegasi technically works against their flight, so they have natural magic abilities that provide them with lift and such. Since we're alicorns, and high-tier ones at that, we've got lots more power than a normal pegasus, so we can just lift ourselves up without the need of wings.
